Our Story
FROM PICONA TO LIOPICONA
In the Goriška Brda region, drying produce has been a tradition for centuries. Piconi – wooden racks made from reed or hazel branches – were once essential for drying fruit.
Today, we carry this heritage forward with state-of-the-art freeze-drying technology, which preserves the colour, flavour and nutrients of Brda’s fruits and vegetables – as if they were freshly picked.
What is freeze-drying?
Freeze-drying is an advanced drying process in which fruit or vegetables are rapidly frozen at extremely low temperatures, and then placed under vacuum to remove almost all of the water – leaving only about 2%.
This way, we preserve the natural flavour, colour, shape and nutrients, as if the produce had just been freshly picked.
Fun fact
The same technology is also used by NASA to prepare meals for astronauts.
